For some reason my menus always run about a week off. So today was my big monthly grocery shop and menu plan for next month, which we will actually start eating from tomorrow until about the last week of September. Here’s what’s on tap.

Sloppy joes* (x2)
Pasta salad*
Greek salad with chicken
Cheeseburger salad
Sausage and cabbage
Pizza (x4) Yeah, we really like it, so I plan on it once a week — either carry out or homemade.
Potato soup – best potato soup ever. I make it without the ham.
Baked ziti – My friend Debbie’s recipe.
Spaghetti and meatballs*
Beef stroganoff
Crockpot cabbage and ham
Crockpot Pork carnitas*
Crockpot Chicken and sweet potatoes
Cuban black bean soup
Crockpot Tex Mex chicken lettuce wraps*
Crockpot Pork roast and apples with sweet potatoes
Crockpot Shredded chicken sandwich
Crockpot chicken teriyaki with fried rice*
Tuscan bean soup and grilled cheese
Bean and cheese burritos*
Chicken pot pie (or on a biscuit)
Beef stew
Squash soup
Shrimp and pasta
Lemon pepper salmon

Things without a recipe link I just kind of make up as I go along. Things that are starred * are already partially made, because today I did this:

  • Made a crockpot full of marinara/pizza sauce.
  • Made a batch of meatballs.
  • Made two batches of sloppy joe meat to freeze.
  • Grilled chicken for salads.
  • Made a batch of salsa.
  • Mixed pork carnita ingredients and froze.
  • Mixed chicken teriyaki ingredients and froze.
  • Mixed Tex-mex chicken ingredients and froze.
Oh yeah, that means some easy evenings coming up in my house! And yes, I am pooped.

Cheeseburger salad – yum!
On to the cheeseburger salad. I love a good cheeseburger, but don’t like the carbs of the bun. I have met few buns that are really worth the carbs — most are pretty tasteless. But I also hated putting my patty and fixings between two lettuce leaves. Somehow that didn’t cut it either. So earlier this summer I started making these cheeseburger salads. Basically it is everything I like on a burger in a salad bowl. 
They typically have:
  • grilled and crumbled hamburger patties
  • romaine lettuce
  • tomatoes
  • dill pickle relish
  • red onion
  • shredded cheddar cheese
  • ranch dressing
  • dollop of ketchup
  • dollop of mustard
The possibilities for these are endless, but the key is to choose the flavors you like best on a burger — Thousand Island sauce, swiss, mushrooms, bacon, caramelized onion, barbecue. Pretty yummy.
Some time this week I really want to get in another good freezer cooking day to put up some breakfast items and mixes.
