Menu Plan Monday :: April 9, 2012

Ah, so many ideas for posts and so little time. I have been working hard — on my house, if not the blog. One part of the house-effort (a post on that is in the works) is to get focused on cooking again. We haven’t been eating out, but we also haven’t been eating well — lots of sandwiches, pizza, and cereal. So I am throwing up a menu plan for this week in an effort to improve and inspire:

Monday: leftovers (We were abundantly blessed from the Easter feast.)
Tuesday: black bean and chicken burritos
Wednesday: pork tenderloin with sweet potatoes
Thursday: slow cooker roasted chicken and mashed potatoes
Friday: chicken fried rice – use leftover chicken
Saturday: spaghetti and meatballs
Sunday: leftovers

Matt has already told me we can go out for dinner this week, so one of these nights may change. Right now, though, I can’t see spending the money when there is a plan in place. Let’s see how tired I am this week.

    This is my first time posting a menu for the week also. We’ve been eating on the run too much lately and not sitting down for nice family dinners as much as I would like.

    Thanks for nudging me back into menu planning! And you reminded me that my kids have asked for spaghetti and meatballs for a couple of weeks running, so that is going on the official menu for the week!

    I need to do a menu plan too. We’ve got stuck in a rut eating the same things each week because it’s easy and saves thought. Here, the cold weather is coming so I am going to use my crock pot more. Your slow cooker roasted chicken and mashed potatoes sounds perfect. The only problem we have is there isn’t usually enough left overs to make a second meal! Thank you for inspiring me to change our menu.
