Ah, so many ideas for posts and so little time. I have been working hard — on my house, if not the blog. One part of the house-effort (a post on that is in the works) is to get focused on cooking again. We haven’t been eating out, but we also haven’t been eating well — lots of sandwiches, pizza, and cereal. So I am throwing up a menu plan for this week in an effort to improve and inspire:

Monday: leftovers (We were abundantly blessed from the Easter feast.)
Tuesday: black bean and chicken burritos
Wednesday: pork tenderloin with sweet potatoes
Thursday: slow cooker roasted chicken and mashed potatoes
Friday: chicken fried rice – use leftover chicken
Saturday: spaghetti and meatballs
Sunday: leftovers

Matt has already told me we can go out for dinner this week, so one of these nights may change. Right now, though, I can’t see spending the money when there is a plan in place. Let’s see how tired I am this week.
