The kids just love s’mores, and I have to agree. What could be better than chocolate and marshmallows on a cookie? S’mores are fantastic at a cookout or on a cold day in front of the fireplace. Unfortunately they are not without their issues. First, what if it’s 90 degrees outside (possible most of the year here), or you don’t have a fireplace, or you have a fireplace but really don’t want the toddler getting close enough to roast anything? Also, there is the perennial problem of not being able to get the marshmallow hot enough to melt the chocolate, and it ends up staying in one big chunk and not melting much at all — ewww.
So in an effort to help my fellow moms, I present the easy way to make the perfect s’more. I wish I could take complete credit for the no-fail s’more method, but the original idea came from the children’s librarian in our old town. I took the idea and perfected it by tweaking the ingredients a bit — and the perfect s’more was born.
First carefully select your ingredients. Choose chocolate chips over chocolate bars to facilitate quicker and more complete melting. Mini-marshmallows fit better on the graham cracker of your choice. I like the fresh stacks because the square size is the perfect snack size for the kids — the rectangle is too big for the richness of the treat. This half-size is just right.

Next cover your ugly pan with foil because you will be taking photos it helps with the clean-up. Lay out your bottom crackers. Then you and your various helpers can cover the crackers with chocolate chips. I usually let the kids put them on, and then I make them stop a minute while I pick up all the strays and add them to the piles.

Once the chocolate is on, then do the same with your marshmallows. You should then have little mountains of chips and mallows on your crackers. And yes that is a fat foot in the background, as someone who will remain nameless likes to sit on the bar while we cook.
While you have been supervising the three-ring circus preparing the s’mores, you’ve also been preheating the broiler on your oven, right?  Once it is ready to go, simply slip the pan onto the top rack positioned at least six inches away. Watch them ever so closely. It will only take a few minutes for them to cook, and it only takes a few seconds for them to go from just-right to garbage-can-fodder. These came oh-so-close.

All that is left to do is smush on the top and feast your eyes on the finished product. Yum, yum. Crispy crackers, slightly-toasted, melty marshmallows, and completely melted chocolate all without smelly smoke or burned body parts.

Oh, and eat it with gusto because it is so good.
