Ok, I am totally post-dating (pre-dating?) this post, so it is not really on Monday. And it isn’t really much of a menu plan either. I’m just a rebel all the way around.

See, my husband left today. Not for good or anything, but for a four-week annual training. So yesterday we were enjoying hanging out and my extra blogging time had to go towards getting my first Making It Count post up — go check it out! That is why the post is late. As for the non-menu part, well, my husband is gone for four weeks. (Did I mention that?) It isn’t much fun to try to cook for three little people who rarely seem to want to eat what I make. Since he is only gone for four weeks this time, I decided not to fight it and just stocked up on their favorites.

Here is what the week looks like:

Monday – Spaghetti and meat sauce (made a big pot of marinara and froze half for later this month)
Tuesday – Something from the list below
Wednesday – Something from the list below
Thursday – Dinner at a friend’s
Friday – Spending the night with my mom
Saturday – Something from the list below (see a pattern?)
Sunday – Ditto


The Master List of Meals for Kids
Frozen pizza
Chicken nuggets and tater tots
Corn dog nuggets
Cheese and cracker monkey platters
Macaroni and cheese
Spaghetti with marinara
Quesadillas
Cereal or other breakfast for dinner

Ah yes, I can just see those Mother of the Year nominations just flying in right now, I tell ya. I do try to serve these up with some fruits and veggies.

The Master List of Meals for Mom
Frozen pizza with salad
Salad with grilled chicken
Grilled chicken sandwich and a salad
Ham sandwich with a salad
Tuna (on salad or sandwich)
Frozen minestrone soup (plus a salad)
Spaghetti with marinara and salad

What can I say? I like salad.

Also today (which is not Monday) we are going to mix up some banana muffins. I use the easy recipe from the Healthy Snacks to Go ebook at Kitchen Stewardship. I am also going to whip up some salsa. We have a busy week, but at some point I want to cook a batch of waffles and/or pancakes to freeze. I have to replenish my supply of freshly ground wheat pastry flour first. I have a wonderful friend who grinds it for me.
